Ingredients:

  • 3 avocados
  • 1/2 cup of diced cherry tomatoes
  • 1 cup of cooked corn
  • 2 limes, zested and juiced
  • 1/3 cup cilantro, roughly chopped
  • 1/2 cup of green onions
  • 1 tbsp of extra-virgin olive oil
  • Salt and pepper *to taste
  • Preparation time: 15 minutes

    Size: 5 Servings

    Instructions:


    1. Dice 3 avocados and place them into a large bowl along with the cooked corn and cherry tomatoes
    2. Mix the lime juice, cilantro, and green onions into a small bowl
    3. Toss the smaller bowl of ingredients into the larger one, and lightly drizzle with olive oil---add salt and pepper *to taste
    4. Serve immediately or keep chilled until ready to serve.
