Healthy Chicken Stuffed Avocado Recipe

Ingredients:

  • 4 avocados, halved and pitted
  • 1 lb shredded chicken
  • 1 red bell pepper, diced
  • 1 jalapeno, minced
  • 1 cup cilantro leaves, roughly chopped
  • 1 lime, juiced
  • Preparation time: 10 minutes

    Size: 4 to 8 Servings

    Instructions:


    1. Scoop out some of the avocado from the pitted area to widen the "bowl" area.
    2. Place the scooped avocado into a medium-size mixing bowl.
    3. Mash it with a fork.
    4. Add the chicken, bell pepper, jalapeno, and cilantro to the mixing bowl. Pour lime juice over.
    5. Stir it all together until everything is well mixed.
    6. Scoop the chicken mix into the avocado bowls and you’re ready to enjoy!
