Liver Healthy Green Bean Casserole

  • Green beans are a rich source of Vitamins A, C and K. Whilst also being full of folic acid and fiber which also largely benefit liver health
  • Shallots are particularly rich in minerals and vitamins. They play an important role in the functioning of the nervous and immune systems

Ingredients:

  • 5 Cups of rinsed, trimmed, and halved green beans
  • 2 Tablespoons of olive oil
  • 1 Minced shallot
  • 2 Cloves of minced garlic
  • 1 Cup of finely chopped mushrooms
  • 2 Tablespoons of all-purpose flour
  • ¾ Cup of vegetable broth
  • 1 cup of unsweetened almond milk
  • 1 ½ Cups of crispy onions
  • Salt and pepper to taste
  • Preparation time: 30 minutes

    Size: 6 Servings

    Instructions:


    1. Preheat the oven to 400F.
    2. Boil the green beans in water for 5 minutes.
    3. In the meantime, sauté the shallots and garlic in olive oil for 2 to 3 minutes. Then add in the mushrooms and season with salt and pepper and cook for 3 to 4 minutes, until lightly browned.
    4. Add the flour to your vegetables and stir to coat everything in the pan. Cook for 1 minute and then start incorporating the vegetable stock gradually.
    5. Add in the almond milk and bring to a simmer. Then reduce the heat to low and cook for 5 to 7 minutes until thick and creamy.
    6. Remove from the heat, add the cooked green beans and 1/3 of the crisy onions. Mix together well and transfer to a baking dish.
    7. Top with the rest of the crispy onions and bake for 15 minutes.
    8. Now it’s ready to be served!
