  • Quinoa is gluten-free and high in protein.
  • Tomatoes are rich in Vitamins A, C and B6.
  • Cucumbers are rich in B vitamins, which have been shown to help ease feelings of anxiety and stress.

Ingredients:

  • ½ cup of Quinoa
  • 4 Firm Roma Tomatoes
  • 1 English Cucumber (Finely Chopped)
  • 2 Bunches Parsley, part of the stems removed, washed and well-dried, very finely chopped
  • 12-15 Fresh mint leaves, stems removed, washed, well-dried, very finely chopped
  • 4 Green onions, white and green, very finely chopped
  • 3-4 Tbsp lime juice (lemon juice, if you prefer)
  • 3-4 Tbsp extra virgin olive oil
  • Romaine lettuce leaves to serve, optional
  • Preparation time: 1 hour

    Size: 6 Servings

    Instructions:


    1. Cook the quinoa per its packaged instructions.
    2. Drain and squeeze the quinoa by hand to get rid of any excess water.
    3. Set aside.
    4. Finely chop the vegetables, herbs and green onions as indicated above.
    5. Drain excess juice from tomatoes.
    6. Place the chopped vegetables, herbs and green onions in a mixing bowl or dish.
    7. Add the bulgur and season.
    8. Mix gently. Now add the lime juice, olive oil and mix again.
    9. For best results, cover the tabouli and refrigerate for 30 minutes.
    10. Transfer to a serving platter.
    11. Enjoy your creation!
